Hi, I’m Ossy!

What started as a shared dream between my wife MaeAnn and I has become a full-blown culinary journey, serving up bold, delicious tacos in Dallas-Ft Worth, Texas.

The first questions I get when customers experience our Tacos are “How did you get started?” or “How can I get more?”

The truth is—my passion for delicious, authentic cuisine isn’t just in our tacos, it’s in my blood. This is our way of sharing who we are. To find out more, keep reading…

Back in 1976, my maternal grandparents opened their taco stand in Monterrey, Nuevo Leon, selling homemade Tacos de Trompo to support their family. My mother, Dolores, at a young age began by warming up tortillas by her parents’ side, she grew into a master in her own right. She later met my father, Rodolfo, a skilled butcher who joined the family business.

Under the guidance of Abuelo Antonio García, my father learned everything he could to make traditional Tacos de Trompo. After some time and plenty of dedication, my mother and father developed the foundation of what we serve today.

After moving to Dallas, our family kept the tradition going, continuing the unique flavor my grandparents started. In my family, tacos were never just a job; it was a way of life and remains our whole-hearted family love today.

From peeling tomatillos to deboning and marinating meat, my dad taught me every step of the process, shaping me into the third-generation Trompero I am today.

Over the last 20+ years our customer base has grown, and with it, so did the demand….and the commitment to our family’s dream.

In 2020, I married my wife MaeAnn—a proud Texas native who embraced the culture and traditions passed-down through me. She crafts every batch of salsa by hand-using recipes passed down, perfected with love, and made to bring out the soul of every taco we serve. Together, we’ve perfected our modern take on traditional Tacos de Trompo; sharing our passion and building lasting relationships with our clients.

We wanted to bring something truly special to the Dallas–Fort Worth metroplex: real-deal, street-style Tacos de Trompo—authentic, made with tradition, and always with love. That dream became a reality in 2022 when Knight Out was officially born.

A fun fact about the name: “Knight Out” is also a tribute to our son, Knight—our fourth-generation Trompero in the making.

Our vision is simple. Offering a memorable “Nite Out” with great food, warm vibes, and community.

Today, Knight Out stands as a testament to tradition, love, and the power of good food to bring people together.
